Waffles
Crispy-outside, fluffy-inside waffles from scratch. Whipping the egg whites separately is the trick to extra-light waffles.

Ingredients
- 250 g plain flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 0.5 tsp salt
- 350 ml milk
- 2 eggs
- 80 g butter
- 1 tsp vanilla extract
Method
- 1
Preheat your waffle iron. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 2
In another bowl, whisk the milk, egg YOLKS, melted butter, and vanilla. (Keep the whites separate.)
- 3
In a clean bowl, whisk the egg WHITES until they hold soft peaks — they should look fluffy and hold their shape when you lift the whisk. This is what makes the waffles light.
- 4
Pour the wet yolk mixture into the dry ingredients and stir until just combined (a few lumps are fine).
- 5
Gently fold in the whipped egg whites with a spatula — fold, don't stir, to keep the air in. Stop as soon as no white streaks remain.
