Tiramisu
The classic Italian no-bake dessert — coffee-soaked ladyfingers layered with a light mascarpone cream, dusted with cocoa. Make it a day ahead.

Ingredients
- 4 eggs
- 100 g sugar
- 500 g mascarpone
- 300 ml strong coffee
- 2 tbsp coffee liqueur
- 300 g ladyfinger biscuits
- 2 tbsp cocoa powder
Method
- 1
Separate the eggs into two bowls. Whisk the egg YOLKS with the sugar until pale, thick, and creamy, about 3 minutes.
- 2
Add the room-temperature mascarpone to the yolks and gently whisk until smooth and combined. (Cold mascarpone can go grainy, so let it warm up first.)
- 3
In a clean, grease-free bowl, whisk the egg WHITES until they hold stiff peaks (they stand up straight when you lift the whisk).
- 4
Fold the whipped whites into the mascarpone mixture in two additions, gently, to keep it light and airy. This is what makes tiramisu cloud-like.
- 5
Mix the cooled coffee with the liqueur in a shallow dish. Quickly dip each ladyfinger in — just 1 second per side. They soak fast; too long and they turn to mush.
