Ingredients
Ingredients
- 600 g chicken breast
- 60 g cornstarch
- 1 egg
- 1 red bell pepper
- 1 green bell pepper
- 200 g pineapple chunks
- vegetable oil
Sauce
- 4 tbsp ketchup
- 3 tbsp rice vinegar
- 3 tbsp sugar
- 1 tbsp soy sauce
Method
- 1
Mix the sauce ingredients (ketchup, rice vinegar, sugar, soy sauce) plus 4 tablespoons water in a bowl until smooth. Set aside.
- 2
Toss the chicken chunks in the beaten egg, then coat thoroughly in the cornstarch so each piece is dry and powdery — this gives the crisp coating.
- 3
Heat about 2cm of oil in a deep pan to 175°C/350°F (a chunk of chicken should sizzle steadily). Fry the chicken in batches until golden and crisp, 4-5 minutes per batch. Drain on paper towels.
