Ingredients
- 1.6 kg whole chicken
- 50 g butter
- 1 lemon
- 4 garlic cloves
- fresh thyme or rosemary
- 1 tbsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
Method
- 1
Take the chicken out of the fridge 30 minutes before cooking so it roasts evenly. Preheat the oven to 200°C/400°F.
- 2
Pat the chicken VERY dry inside and out with paper towels — dry skin is crispy skin. Sit it in a roasting tin.
- 3
Rub the softened butter and olive oil all over the skin. Season generously all over with the salt and pepper, including a little inside the cavity.
- 4
Stuff the cavity with the lemon halves, garlic, and herbs. Tie the legs together with kitchen string if you have it (helps it cook evenly).
- 5
Cook it your way
Save it to scale servings, run step timers, and send the ingredients to a shopping list that skips what is already in your pantry.
