Quesadillas
Crispy tortillas folded around melted cheese. The simplest crowd-pleaser — ready in minutes and great for using up odds and ends.

Ingredients
- 4 flour tortillas
- 200 g cheese
- 1 green onion
- 0.5 tsp butter or oil
- salsa, guacamole, sour cream
Method
- 1
Grate the cheese (it melts faster and more evenly than pre-grated). Slice the green onion if using.
- 2
Heat a large dry skillet over medium heat. A little butter or oil gives extra crispness, but a dry pan works too.
- 3
Place one tortilla in the pan. Scatter cheese (and green onion) evenly over the whole surface, then top with a second tortilla, pressing down gently.
- 4
Cook until the bottom is golden with brown spots and the cheese begins to melt, about 2-3 minutes. Peek by lifting an edge with a spatula.
- 5
Carefully flip the whole quesadilla with a wide spatula (or slide it onto a plate and invert it back). Cook the second side until golden and the cheese is fully melted, about 2 minutes more.
