Ingredients
Ingredients
- 800 g pork shoulder
- pita and tzatziki
Marinade
- 4 tbsp olive oil
- 2 tsp dried oregano
- 4 garlic cloves
- 1 lemon
- salt and pepper
Method
- 1
Mix the marinade: olive oil, oregano, garlic, lemon juice, 1 teaspoon salt, and plenty of pepper.
- 2
Toss the pork cubes in the marinade until well coated. Cover and marinate at least 1 hour (overnight is best) in the fridge.
- 3
If using wooden skewers, soak them in water for 20 minutes so they don't burn. Thread the pork onto the skewers, leaving small gaps so they cook evenly.
- 4
Heat a grill, grill pan, or barbecue to high. It should be properly hot for a good char.
- 5
Grill the skewers, turning every few minutes, until browned and charred on all sides and cooked through, 10-12 minutes total.
- 6
Rest 5 minutes, then serve with warm pita, tzatziki, lemon wedges, and a Greek salad.
