Pork Dumplings
Juicy pan-fried pork dumplings (potstickers) with a crispy bottom. Folding takes practice — they'll still taste great even if they're not perfect.

Ingredients
Ingredients
- 30 round dumpling wrappers
- 2 tbsp vegetable oil
Filling
- 400 g ground pork
- 150 g napa cabbage
- 2 green onions
- 1 tbsp fresh ginger
- 2 tbsp soy sauce
- 1 tbsp sesame oil
Method
- 1
Make the filling: in a bowl, combine the ground pork, chopped cabbage, green onions, ginger, soy sauce, and sesame oil. Mix with a spoon (or hand) in one direction for a minute until it becomes slightly sticky and paste-like — this gives a juicy, cohesive filling.
- 2
Fill the dumplings: hold a wrapper in your palm and place 1 teaspoon of filling in the center. Don't overfill or they'll burst.
- 3
Wet the edge of the wrapper with a finger dipped in water. Fold it in half over the filling into a half-moon and pinch the top closed. Make a few small pleats along one side if you like, pressing firmly to seal. Stand each finished dumpling on a floured tray.
