Pad Thai
Thailand's famous stir-fried noodles — sweet, sour, salty, and savory all at once. Soak the noodles, don't boil them.

Ingredients
Ingredients
- 250 g flat rice noodles
- 300 g shrimp or chicken
- 2 eggs
- 100 g bean sprouts
- 3 green onions
- 3 garlic cloves
- 3 tbsp vegetable oil
- 50 g roasted peanuts
- 1 lime
Sauce
- 3 tbsp fish sauce
- 3 tbsp tamarind paste
- 2 tbsp brown sugar
Method
- 1
Soak the rice noodles in warm (not boiling) water for about 20 minutes until pliable but still firm — they'll finish cooking in the pan. Drain and set aside. Boiling them makes them mushy.
- 2
Mix the sauce: stir together the fish sauce, tamarind paste, and brown sugar until the sugar dissolves. Taste — it should be balanced sweet-sour-salty.
