Meatloaf
A homey baked loaf of seasoned ground beef with a sweet-tangy glaze. Soaking breadcrumbs in milk keeps it moist, not dense.

Ingredients
Ingredients
- 800 g ground beef
- 80 g breadcrumbs
- 120 ml milk
- 1 onion
- 2 eggs
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 0.5 tsp black pepper
Glaze
- 4 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp Dijon mustard
Method
- 1
Preheat the oven to 180°C/350°F. In a large bowl, soak the breadcrumbs in the milk for 5 minutes — this 'panade' is the secret to a moist meatloaf.
- 2
Add the beef, grated onion, eggs, Worcestershire, salt, and pepper to the soaked crumbs. Mix gently with your hands JUST until combined — overmixing makes it tough.
- 3
Transfer to a lined baking tray and shape into a loaf about 10cm wide (a free-form loaf browns better than one packed in a tin).
