Margherita Pizza
A simple homemade pizza with a chewy crust, bright tomato sauce, fresh mozzarella, and basil — the colors of the Italian flag. Made on a baking sheet; no special equipment needed.

Ingredients
- 250 g bread flour
- 1 tsp instant yeast
- 0.75 tsp salt
- 160 ml warm water
- 1 tbsp olive oil
- 0.5 cup canned crushed tomatoes
- 1 garlic clove
- 125 g fresh mozzarella
- fresh basil leaves
- salt
Method
- 1
In a large bowl, whisk together the flour, instant yeast, and salt. (Keep the salt and yeast from touching directly at first — salt can slow the yeast.)
- 2
Make a well in the center, pour in the warm water and 1 tablespoon olive oil, and stir with a spoon until a shaggy dough forms and no dry flour remains.
- 3
Tip the dough onto a lightly floured counter and knead with the heels of your hands for 8 minutes, until smooth and springy. It should bounce back slowly when poked.
- 4
Lightly oil the bowl, put the dough back in, cover with a plate or cling film, and leave somewhere warm until doubled in size, about 1 hour.
