Macaroni and Cheese
Baked pasta in a rich, creamy cheese sauce with a golden top. A proper cheese sauce (not just melted cheese) makes it silky.

Ingredients
- 400 g macaroni
- 50 g butter
- 50 g plain flour
- 700 ml whole milk
- 300 g sharp cheddar
- 1 tsp Dijon mustard
- salt, pepper, pinch of nutmeg
- 30 g breadcrumbs
Method
- 1
Preheat the oven to 190°C/375°F. Cook the macaroni in salted water 2 minutes SHORTER than the package says (it finishes baking). Drain.
- 2
Make the cheese sauce: melt the butter in a saucepan over medium heat, whisk in the flour, and cook 1-2 minutes to a smooth paste (roux) without browning.
- 3
Pour in the warm milk gradually, whisking constantly to prevent lumps, until it thickens to a smooth, pourable sauce, 4-5 minutes.
- 4
Turn off the heat and stir in most of the grated cheddar, the Dijon, salt, pepper, and nutmeg until melted and smooth. Off the heat keeps it silky (boiling cheese can go grainy).
