Ingredients
- 4 large baking potatoes
- 1 tbsp olive oil
- 1 tsp salt
- 60 g butter
- 100 g cheese
- 4 slices of bacon
- sour cream and chives
Method
- 1
Preheat the oven to 200°C/400°F. Scrub the potatoes clean and dry them well.
- 2
Prick each potato several times with a fork (this lets steam escape so they don't burst). Rub all over with olive oil and the flaky salt — this makes the skin crispy and delicious.
- 3
Place directly on the oven rack (with a tray below to catch drips) and bake for 60-70 minutes, until the skin is crisp and a knife slides into the center with no resistance. Baking on the rack, not wrapped in foil, gives crispy skin.
- 4
Cut a deep cross in the top of each potato and squeeze the sides to push the fluffy inside up and open.
- 5
Cook it your way
