Hummus
Smooth, creamy chickpea dip with tahini, lemon, and garlic. The secret to ultra-smooth hummus is good tahini and a few minutes of extra blending.
by Culicious Kitchen
Ingredients
- 400 g canned chickpeas
- 4 tbsp tahini
- 1 lemon
- 1 garlic clove
- 3 tbsp olive oil
- 0.5 tsp ground cumin
- 0.5 tsp salt
- paprika and parsley
Method
- 1
For the smoothest hummus, optionally pop the skins off the chickpeas by gently squeezing each one — tedious but it makes a noticeably silkier dip. (Or skip and blend longer.)
- 2
In a food processor, blend the tahini and lemon juice together FIRST for 30 seconds — this whips the tahini and is the key to creaminess.
- 3
Add the garlic, cumin, salt, and olive oil and blend again.
- 4
Add the chickpeas and blend, scraping down the sides, for 2-3 full minutes until completely smooth. Patience here pays off.
