Grilled Cheese Sandwich
Golden, crispy bread with a molten cheese center. Simple, but technique matters — low and slow is the way.

Ingredients
- 4 slices of bread
- 120 g cheese
- 3 tbsp butter
Method
- 1
Butter one side of each slice of bread, spreading right to the edges. The butter is what makes it golden and crisp.
- 2
Place two slices butter-side DOWN. Pile the cheese evenly on top, then close with the other slices, butter-side UP.
- 3
Heat a skillet over MEDIUM-LOW heat — this is the key. Too hot and the bread burns before the cheese melts.
- 4
Add the sandwiches and cook slowly until the underside is deep golden brown, about 3-4 minutes. Press gently with a spatula now and then.
- 5
Flip carefully and cook the second side until golden and the cheese is fully melted and oozing, another 3-4 minutes.
- 6
Transfer to a board and let sit 1 minute, then cut in half on the diagonal (it just tastes better that way) and eat while hot and gooey.
