Fudgy Brownies
Dense, rich, deeply chocolatey brownies with a shiny, crackly top. Melting chocolate into the batter (not just cocoa) makes them extra fudgy.

Ingredients
- 200 g dark chocolate
- 170 g butter
- 250 g sugar
- 3 eggs
- 1 tsp vanilla extract
- 100 g plain flour
- 30 g cocoa powder
- 0.5 tsp salt
Method
- 1
Preheat the oven to 175°C/350°F. Line a 20cm square tin with parchment, leaving an overhang to lift the brownies out later.
- 2
Melt the chopped chocolate and butter together — either in short bursts in the microwave (stirring between) or in a bowl set over simmering water. Stir until smooth, then let cool slightly.
- 3
Whisk the sugar into the melted chocolate, then beat in the eggs one at a time and the vanilla. Beat for a minute — this helps create the shiny, crackly top.
- 4
Sift in the flour, cocoa, and salt and fold gently with a spatula JUST until combined. Overmixing makes cakey, not fudgy, brownies.
