Fluffy Pancakes
Tall, fluffy American-style pancakes. The tricks: don't overmix the batter, and let it rest before cooking.

Ingredients
- 200 g plain flour
- 2 tbsp sugar
- 2 tsp baking powder
- 0.5 tsp salt
- 250 ml milk
- 1 egg
- 30 g butter
- maple syrup
Method
- 1
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 2
In another bowl, whisk the milk, egg, and melted butter.
- 3
Pour the wet into the dry and stir gently with a few strokes until JUST combined. The batter should be lumpy — overmixing develops gluten and makes flat, chewy pancakes.
- 4
Let the batter rest for 10 minutes. This relaxes the gluten and activates the baking powder for fluffier pancakes.
- 5
Heat a non-stick pan or griddle over medium-low and lightly butter it. Pour about 1/4 cup of batter per pancake.
