Ingredients
Ingredients
- 4 eggs
- 2 English muffins
- 4 slices of ham
- 1 tbsp white vinegar
Hollandaise
- 3 egg yolks
- 120 g butter
- 1 tbsp lemon juice
- salt and cayenne
Method
- 1
Make the hollandaise: put the 3 egg yolks, lemon juice, a pinch of salt, and cayenne in a blender. Blend for a few seconds.
- 2
With the blender running on low, very slowly drizzle in the HOT melted butter in a thin stream. It will thicken into a glossy, pourable sauce. Keep it somewhere warm (not hot) so it doesn't split.
- 3
Bring a wide pan of water to a bare simmer (small bubbles) and add the vinegar — it helps the whites hold together. Toast and butter the muffin halves, and warm the ham.
