Classic Cheeseburger
A juicy homemade beef burger with melted cheese. The secret is not overworking the meat and seasoning the outside generously.

Ingredients
- 600 g ground beef
- 4 burger buns
- 4 cheese slices
- salt and black pepper
- 1 tbsp vegetable oil
- lettuce, tomato, onion, pickles
- ketchup and mustard
Method
- 1
Divide the beef into 4 portions and gently form into balls, then flatten into patties slightly wider than the buns (they shrink). Handle the meat as little as possible — overworking makes tough burgers. Press a small dimple in the center of each so they cook flat.
- 2
Season the patties generously with salt and pepper on both sides, right before cooking (salt too early draws out moisture).
- 3
Heat the oil in a skillet or grill pan over medium-high until very hot. Add the patties and DON'T press or move them — pressing squeezes out the juices.
- 4
Cook 3-4 minutes until a deep brown crust forms, then flip once.
- 5
Cook it your way
