Chocolate Cake
A moist, tender chocolate layer cake with silky chocolate frosting. Hot coffee or water in the batter makes it extra moist and deepens the chocolate.

Ingredients
- 250 g plain flour
- 350 g sugar
- 90 g cocoa powder
- 2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 240 ml buttermilk
- 120 ml vegetable oil
- 240 ml hot coffee
- 2 tsp vanilla extract
Method
- 1
Preheat the oven to 175°C/350°F. Grease two 20cm round tins and line the bases with parchment.
- 2
In a large bowl, whisk together all the dry ingredients: flour, sugar, cocoa, baking soda, and salt.
- 3
Add the eggs, buttermilk, oil, and vanilla and beat until smooth, about 2 minutes.
- 4
Carefully stir in the hot coffee — the batter will be very thin and runny. That's correct! The thin batter is what makes this cake so moist, and coffee intensifies the chocolate without tasting of coffee.
