Ingredients
- 600 g chicken breast
- 2 bell peppers
- 1 large onion
- 2 tbsp vegetable oil
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 lime
- 8 tortillas
- salt
Method
- 1
In a bowl, toss the chicken strips with 1 tablespoon oil, the chili powder, cumin, paprika, and 1 teaspoon salt. Let marinate 10 minutes.
- 2
Heat a large skillet (cast iron is ideal) over high heat until very hot — you want a real sizzle for that fajita char.
- 3
Add the chicken in a single layer and cook, stirring occasionally, until browned and cooked through, about 6-7 minutes. Remove to a plate.
- 4
Add the remaining oil to the same pan, then the sliced peppers and onion. Cook over high heat, stirring, until they're charred at the edges but still a little crisp, 5-6 minutes.
