Cheese Omelette
A classic French-style folded omelette — soft, tender, and filled with melted cheese. Low heat and a quick hand are key.

Ingredients
- 3 eggs
- 40 g cheese
- 15 g butter
- salt and pepper
- chives
Method
- 1
Crack the eggs into a bowl, add a small pinch of salt and pepper, and whisk thoroughly until completely smooth and uniform.
- 2
Heat a small non-stick pan over medium-LOW heat and add the butter. Let it melt and foam but not brown.
- 3
Pour in the eggs. Let them sit for a few seconds, then use a spatula to gently push the set edges toward the center, tilting the pan so raw egg flows into the gaps.
- 4
When the eggs are mostly set but still a little glossy and wet on top (about 2 minutes), scatter the cheese over one half. Don't overcook — a dry omelette is a sad omelette.
- 5
Tilt the pan and fold the empty half over the cheese half with your spatula. Let it sit 30 seconds for the cheese to melt.
