Beef Stir-fry
Tender strips of beef and crisp vegetables in a glossy sauce. Velveting the beef with cornstarch keeps it silky.

Ingredients
- 500 g beef sirloin or flank
- 1 tbsp cornstarch
- 4 tbsp soy sauce
- 1 broccoli head
- 1 red bell pepper
- 1 carrot
- 3 garlic cloves
- 1 tbsp fresh ginger
- 1 tbsp oyster sauce
- 1 tsp sugar
- 3 tbsp vegetable oil
Method
- 1
Slice the beef as thinly as you can ACROSS the grain (look for the lines in the meat and cut perpendicular to them) — this makes it tender. Toss it with the cornstarch and 1 tablespoon soy sauce. Let sit 15 minutes.
- 2
Mix the sauce in a small bowl: remaining 3 tablespoons soy sauce, oyster sauce, sugar, and 3 tablespoons water. Set aside.
- 3
Heat 2 tablespoons oil in a wok or large skillet over high heat until almost smoking. Add the beef in a single layer and sear without stirring for 1 minute, then stir-fry until just browned, about 2 minutes total. Remove to a plate (it'll finish later).
