Beef Stew
Fall-apart beef and vegetables in a rich gravy. Browning the meat well and a long gentle simmer build all the flavor.

Ingredients
- 1 kg beef chuck
- 3 tbsp plain flour
- 3 tbsp vegetable oil
- 1 large onion
- 3 garlic cloves
- 2 tbsp tomato paste
- 250 ml red wine
- 1 L beef stock
- 4 carrots
- 3 potatoes
- 2 bay leaves
- salt and pepper
Method
- 1
Pat the beef cubes very dry and season with salt and pepper, then toss in the flour to coat. Dry, floured meat browns and thickens the stew.
- 2
Heat 2 tablespoons oil in a heavy pot over high heat. Brown the beef in batches (don't crowd, or it steams) until deeply browned on all sides, about 8 minutes per batch. Set aside. This browning is where the flavor lives.
- 3
Add the last tablespoon of oil and the onion; cook 5 minutes. Add the garlic and tomato paste and stir 1 minute.
