Ingredients
- 1 tbsp vegetable oil
- 1 onion
- 500 g ground beef
- 1 tbsp chili powder
- 1 tsp ground cumin
- 400 g canned black beans
- 250 g cooked rice
- 4 large flour tortillas
- 100 g cheddar cheese
- salsa and sour cream
- salt
Method
- 1
If you don't have cooked rice ready, cook it now per the package and keep warm.
- 2
Heat the oil in a skillet over medium heat and cook the onion until soft, about 5 minutes.
- 3
Add the ground beef, breaking it up, and brown until no pink remains, about 7 minutes. Tip off excess fat if there's a lot.
- 4
Stir in the chili powder, cumin, and 1 teaspoon salt. Add the drained black beans and 3 tablespoons water; cook 3-4 minutes until warmed and saucy. Taste and adjust salt.
