Ingredients
Ingredients
- 500 g flank or sirloin steak
- 1 tbsp cornstarch
- 1 large broccoli head
- 3 garlic cloves
- 1 tbsp fresh ginger
- 3 tbsp vegetable oil
Sauce
- 4 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp cornstarch
Method
- 1
Toss the thinly sliced beef with 1 tablespoon cornstarch (this 'velvets' it for tenderness). Mix the sauce ingredients with 4 tablespoons water in a bowl.
- 2
Blanch the broccoli: drop the florets into boiling water for 90 seconds, then drain. They'll be bright green and crisp-tender, and finish in the stir-fry.
- 3
Heat 2 tablespoons oil in a wok over high heat until almost smoking. Sear the beef in a single layer, undisturbed for 1 minute, then stir-fry until just browned, 2 minutes total. Remove.
