Ingredients
- 3 very ripe bananas
- 100 g butter
- 150 g sugar
- 2 eggs
- 1 tsp vanilla extract
- 220 g plain flour
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 tsp cinnamon
Method
- 1
Preheat the oven to 175°C/350°F. Grease and line a loaf tin (about 23x13cm).
- 2
In a large bowl, mash the ripe bananas with a fork until fairly smooth. Very ripe, spotty bananas are sweeter and mash more easily — that's what you want.
- 3
Stir the melted butter into the mashed bananas, then mix in the sugar, eggs, and vanilla until well combined.
- 4
In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
