Avocado Toast
Creamy smashed avocado on crunchy toast. Simple, but the details — good bread, plenty of salt, lemon, and chili — make it sing.

Ingredients
- 2 slices of good bread
- 1 ripe avocado
- 0.5 lemon
- flaky salt and black pepper
- red pepper flakes
- 1 tsp olive oil
Method
- 1
Toast the bread until deeply golden and crisp — it needs to be sturdy enough to hold the avocado without going soggy.
- 2
Halve the avocado, remove the pit, and scoop the flesh into a bowl.
- 3
Add the lemon juice and a good pinch of salt, then mash with a fork to your liking — chunky or smooth. Taste; it should be well seasoned.
- 4
Spread the smashed avocado generously over the warm toast, right to the edges.
- 5
Finish with a drizzle of olive oil, a sprinkle of flaky salt, black pepper, and red pepper flakes if you like heat. Serve immediately, optionally topped with a poached or fried egg.
